WIAW, Quinoa...

I actually had some new eats this week, not just boring same old foods this week. For my WIAW post I thought I would talk about what I did with the cheesy broccoli quinoa I made and talked about last Wednesday.

Main dish on Wednesday, but a side dish on Thursday.

Paired with pas and fake chicken nuggets. You can't have too many green foods on your plate.

On Sunday morning I added some to a fritatta that I baked.

I love fritattas. What ould be easier than throwing some egg whites, chia seeds and whatever veggies you want and bake for about 30 minutes. You can eat it by itself, put it on an English muffin, or like I did on Sunday, make a breakfast burrito.

Half an avocado, quinoa fritatta, a little cheddar cheese and salsa. I am seriously loving avocados now. Why did it take me so long to discover my love of avocados?

I love quinoa. It's always good to love a food that is packed full of good stuff like protein, iron, calcium and potassium.

It wasn't all healthy last week.

I went a little over board with the mini Reeces pieces and M&Ms, but it was still really good.

I picked up a boxed brownie mix yesterday. Sometimes you just need brownies, but you don't want to go to all the trouble of making them from scratch. I did add extra semi sweet chocolate chips. Yummy!

So there you have it, another week of eats. It is almost May! Next week I should have some pre and post race week eats. Oh how I love race week.

WIAW #11...

I tried out a new recipe tonight that I'm using for my WIAW post this week.

I got home tonight, straightened up a bit and hit the iPad for some dinner inspiration. I came across a recipe for Quinoa Black Bean Burrito Bowls.

I followed parts of the recipe and changes it a little bit. In the end I had a bowl with quinoa, black beans, corn, cheddar cheese and salsa. It was yummy.

Quinoa made with veggie stock. I believe you need to add as much flavor as possible and veggie stock is way better than plain water.

Black beans, one of my favorites. With a little onion, garlic, veggie stock, chili powder, coriander and ground red pepper. Next time I might have to add a jalapeƱo to add a little kick.

The finished dish. I know my mad photography skills are probably making you super envious. Just know that this dish was about a thousand times better than this photograph. It's always nice when a new recipe turns out well the first time around.

Lunch wrap filled with hummus, carrots, broccoli slaw and kale served with a side of pretzel crisps. Have you tried Pretzel Crisps? Don't leave the grocery store without them. You won't be disappointed.

It was a very tasty week, maybe a little too much eating out, it's been too hot to cook. Now I feel inspired, we'll see if it lasts next week could be a post full of sandwiches and granola bars.
